Kale - a super food for what?

Kale I can grow in winter so prolifically I eat it as Kale chips most days and my bull eats it as breakfast. Come summer and I don't see it get past a raw bloody shoot before its shredded. I have learned about organic gardening that the seasons play a role also in insects and producing food without the use of chemicals must have allowances for what insects are around at what time of the year. Most of what you read talks about the seasons as hot and cold, frost and dry but they fail to mention your location, your climate and what insects are around at what time. Where I live we get frost, only just but the farm next door would get 20 mornings a year with frost, I probably get 3 hits a year.  As the seasons go by on my farm and I learn and record what grows and dies I'm learning for me kale is a winter crop. In summer it attracts insects and grubs and God knows what, it's the worst summer plant to have for me - it's a magnet to the eatty and crawly things. Lettuce those succulent little leaves you would think would be first choice far an insect but kale is the king for insect attraction.
