Huge Cabbage but I still can't get it Right

Organically growing vegetables I can do and my latest is huge cabbage. I had so many I started feeding them to the cattle until the poor buggers had the runs so bad they didn't even have to lift their tails it just ran out. It's kinda poetic justice for the time they got in the garden and destroyed it. I love my cattle so don't get narky  - I bet my cattle are the only ones that have Kale for breakfast .

Where I'm failing is I'm growing more than I need and can preserve. I have two options I'm thinking (1) find a place to trade the excess or: (2) only grow enough for myself.  Now both options have their challenges and it's a bit like this. If I buy a punnet of seedlings they usually have 8 individual seedlings. If all 8 come 'ripe' at the same time then I have an over supply and if they are cabbages bigger than basketballs then, excuse the french I have 'shit loads'.

What I need to do, most likely is grow vegetables from seeds. I am by definition an man of plans - not.  a more intelligent person would would out a weekly diet, well ingredients for the dishes I might make and plant those things every week so somewhere down the track when it comes to harvest I have enough for the week and the next week are just behind and so on.

Oh to be a planner - for now I guess its giant cabbage and the cattle will just have the runs and I'll be farting like a brewery horse. I'll retire some day soon and have time to figure this all out.
